Miso Peanut Ramen Bowls

So good, so easy, so comforting. We don’t make the tofu crumbles, just slice tofu and add two sift boiled eggs. We ladle out two bowls for our toddlers then add the curry (Mae Ploy, goated). This had become my go to neighbor food delivery, and a weeknight staple. It’s easy to make vegetarian and vegan if you sub the better than boullion for a veggie broth alternative.

POY is great in general! I think there are some other extremely fast gems in there but I haven’t had the energy to discover them lol.

I have never made the tofu crumble! I usually just put tofu in sliced. I pretty much always have the broth ingredients on hand, but I don’t usually buy extra firm tofu or teriyaki and I’m not usually planning ahead for this one I guess. However I have sent this to people who made it fully and the crumble seems to get good reviews
