best ever pavlova

i have made many pavlovas in my time and this is the only one to come out perfectly crisp on the outside and perfectly marshmallowy on the inside, with zero collapsing or browning. is it more work than traditional? yes. will you remember how much work it was when you’re eating a delicious cloud topped with whipped cream and mountains of whatever fruit is in season? no you will not.
