Grecian Style Eggplant with Tomatoes and Onions

I have become such an eggplant lover in a world of eggplant haters.

This is one of my favorite ways to eat eggplant. I like it on its own, on toast, or mixed with some plant-based ground beef for a meaty pasta sauce. mmmmmmmmm
