We aren't attending enough dinner parties starring beef tenderloin, and it's time we rectify that. You get to tie this up with twine, satisfying! Show stopping! Low and slow in the oven. Make a horseradish sauce and DELIGHT your guests. We used the attached Caro Chambers recipe when we hosted Christmas last year. It was GOOD I still think about it.

Make a béarnaise sauce to go with it! My brother-in-law makes it with beef tenderloin on Christmas Eve and I look forward to it all year.
