And bonus points if you have the chef’s cookbook at home… i snapped this photo next to the kitchen at Publican Quality Meats (which is semi-open and nearby the bathroom area) and now I know exactly which peppers they use for their famous pimiento cheese spread.

I know they all want us to switch to diamond kosher but I feel like my hand has spent too long sprinkling Morton and I’m afraid to make the switch!

I made the switch in 2019 and I like the salt! My only kvetch is they don’t carry it in every market so i have to seek out the special salt in the red box. Morton’s is just as good—the crystals are slightly smaller so if a chef uses Diamond Crystal, you have to guess how much Morton’s to use (a little less).

They don’t carry it in every market, exactly! I’m a diamond stan too @Sandy Caribou . But agreed, if you know your pinch, go with it @Sara Quinn - it’s so hard to re-adjust between sea salt and Kosher, let alone Kosher to Kosher where the use case would be identical

I asked a restaurant which black vinegar they use and she not only told me the brand name (Kong Yen) she gave me a full soup container of it for free!!
