Reporting back since I just made a batch. Incredibly delicious. I could eat the dough just as is. The only issue is that the cookies never set and came out as just baked balls. I don’t know if it’s because of the kind of nut butter I used but despite adding more per the instructions it never bound together like regular cookie dough. Still have two boxes to go through.

Also left them in the oven for roughly double the time and while it settled down into a dome shape by then it kind of crumbled. Not sure what your experience is like.

I’m actually now pretty sure it’s because of the almond butter I used. It’s got way too much fat content and as the cookies cooled I can see the split oil the parchment paper. Next time will try normal peanut butter and maybe use more butter as a binder.

Yay I am so glad!! Ditto about the dough. Yes I initially used almond butter and had trouble with the consistency too. I think you’re right about the fat/how almond butter’s oil separates. I also think it’s true for most oily/oil separating peanut butters and whatever additives are in them. In my experience, the more natural the nut butter, the more likely it is to separate and have that oil, so maybe that’s what caused the consistency issue? I’m by no means a nut butter expert, but I’ve only tried it with batches of almond butter and batches of peanut butter, and I have preferred the peanut butter more.

Okay I’m glad then it wasn’t just me. Did you find the peanut butter batch to taste overwhelmingly of peanut butter? If so I may try one batch half almond half peanut butter.

There was a heavy peanut butter taste but I think I think we added more than it called for haha

Okay one final check in. Made a new batch today and I'm pretty sure my error last time was not letting the butter soften enough which in turn meant I used less almond butter which meant much less splitting.

Yay! So you were kind of right? I’m not a baker so I’m amazed at how quickly you figured it out. What were your thoughts? About to make more soon and not sure which nut butter to use— I may try 1/2 almond and 1/2 peanut butter

Yes, so it's definitely a moisture issue where the mix is not hydrating properly. The noticeable difference this time was that I left the butter out much longer by accident. I had to step away for about an hour and when I came back it had softened to a point where it was even softer than the consistency of spreading peanut butter. I remember the last time it was much firmer. I did wind up adding like an extra tablespoon of almond butter just to round out some of the dryer bits but it was far less than I previously used.

And this time once the dough baked out it rounded out into a disc rather than stay in a blob shape and it was much less greasy.

I have one more box left to play around with.
