Greens and beans is on every menu here in Youngstown, Ohio! Youngstown has a huge Italian American population. My partner is Italian American and this is his grandmother’s favorite dish.

any east coast italian american kids in the house? please tell me im not the only one who grew up on G&B. this is basically the only food you need. i’m not joking. there’s something primal about the combo here. we prefer it with broken up italian sausage but you can go vegetarian. Might need to get crazy and film a vid for Rec League.

YES! everyone has their own approach. I haven't been satisfied with any online recipe to share. sometimes i see it called "minestra" online and that's closer. I make vats of this and freeze it. Escarole needs Kale's PR guy, because it's so good for you.

100% Agree! I moved here from Austin. It was very difficult to find escarole in Austin while it’s everywhere here in Youngstown. That’s how popular it is. I’m obsessed with this region’s wedding soup that uses escarole as well. My advice would actually be to consult community cookbooks. Thats where local community members would share their recipes often connected to churches or other types of community centers. A lot of them are in the public domain and have been digitized by various archives/libraries.
