if you absolutely must have turkey, I'd made this alongside a (much better) roast chicken, instead of a whole turkey. listen to the first comment and wrap the skin around the outside of the whole thing, instead of leaving it on the inside.

one note is that turkey breast is kind of hard to find? I think I ordered it like 3 times on Instacart before someone could find it.
