Kanazawa wine bar

Tokyo, Kyoto, Kanazawa. I’m going to Japan for 9 nights in 2 weeks. My second time, but the first was 10 years ago and I honestly can’t recall much. I’m inundated with recommendations, and my brain is having trouble sorting through them all, but if you could suggest ONE (and only ONE) restaurant or shop, what would it be? I’m actively looking to avoid anything with a line/too hype-y. Thank you!
