mayak eggs (korean marinated eggs)

shoutout @comte for sharing this recipe that upped my rice bowl game by 1000%

1. make these eggs, let them marinate for at least 24 hours before making bowls

2. coconut rice: one cup of rice brought to boil in one 14 oz can of coconut milk, simmer until cooked and fluffable

3. use egg marinade (eggs can chill in a lil bowl in the fridge after removed from marinade) in pressure cooker with two chicken breasts, shred chicken and put back in pressure cooker with the marinade liquid to get saucy

4. top rice with chicken, marinated eggs sliced in half, diced avocado, sliced cucumber, pickled onions, cracked pepper, sesame seeds, a generous heaping of chili crisp
