I need recs for good breakfast spots in NYC, preferably LES. What are the hip but good places?

I am obsessed with their eggs. The most beautiful and delicious egg I have ever had. I return to this cafe every time I'm in NYC and I dream about these eggs all the time. I've tried to make them many times and failed miserably
