Prep and bake food at home: I love to cook, but I don’t like to pack, prep, and clean up when I’m camping. So I bake things ahead of time (muffins and cookies) and prep ingredients (veggies and herbs) to cook with. This way meals are quicker with less cleanup. I also find that prepped ingredients can pack easier too.

Coleman Xcursion 1-Burner Butane Stove: When the camp stove of the van I was renting crapped out on day 2 of my 2 week PNW road trip I grabbed one of these from a nearby REI. Surprisingly powerful and easy to pack, great for one pan/pot meals.
