Hôtel du Couvent, Nice

The entire hotel is spectacular (literally carved out of the stone walls of a former convent, perched on the hill overlooking all of Nice and the French Riviera). But the subterranean Roman baths are the cherry on top, especially if you find yourself stuck inside during a rare Mediterranean downpour!
