a summer potluck specialty. Can be made a day in advance, served chilled or at room temp. Sweet, spicy creamy, hearty. I just use the frozen Trader Joe's roasted corn so there's no cooking, just chop and mix.

This is the easiest recipe to make—I halve the mousse and instead use a pre-made graham cracker crust, then add marshmallows on top for a s’mores pie. Crowd pleaser no matter the age group!

Hershey's "Perfectly Chocolate" chocolate cake + frosting

Stealth all-time cake great lurking on the back of the Hershey's cocoa box (many recipes online are basically a riff on it). Light, fluffy + deliciously cocoa-y (you can also sub in fancier cocoa, if you like, or Hershey's Special Dark cocoa). The secret is adding a cup of boiling water (or hot coffee) to the cake batter, which makes it appalling gloppy. Comes out wonderfully every time, though. I like to make seven-minute frosting (basically v. soft marshmallow) to layer in-between, so that the final cake is like an unhinged Hoho. Also excellent layered with raspberry jam or peanut butter buttercream (I rec. the Thomas Keller recipe for the filling of his homemade Nutterbutters for Bouchon Bakery).

Easy 3-Ingredient Clam Dip

This is such a gross-sounding dip but it is amazing and I’m super picky and It is always a hit! I make it with a block of cream cheese, a can of minced canned clam (drained of most of the juice but save a little to thin out the consistency), and Worcestershire sauce to taste. Anything else added seems too extra but mix it all in a mixing bowl and if it’s for a party make at least a double batch! Chip of choice is Frito’s scoops- trust.
