Shrubs are fruit with a yummy vinegar and sugar (think TART, or Brightland to splurge) The mixture is like a syrupy/vinegary that you top with seltzer and a ton of ice for a really sour-sweet cooler. The first time I had a shrub drink was at Botanica in LA and I started making them with plums from the farmer's market and this Food52 recipe.

“Past their prime plums? Nearly expired strawberries? A sad melon… shrub! A beautiful ratio of macerated fruit to vinegar, left to funkify and excite your next carbonated water or cocktail.”
