I dream of this kelp noodle salad when I’m not in LA, and so I’ve made it at home by memory. I top the salad with cooked shrimp and it’s like an iodine explosion. Why do I dream about this salad? Kelp noodles are a really sly substitute for glass noodles. The salad is crunchy with shredded cabbage, carrots, celery and scallions, and full of umami/salt from a simple combo of soy sauce, rice vinegar and sesame oil and sesame seeds (the recipe online calls for honey, I don’t think it needs it.)
**Kelp noodles are stocked at Whole Foods etc, and they are absolute MAGIC —they don’t require heat, you constitute them with lemon juice and baking soda and cold water. Just soak, and wash through a colander. The noodles get soft and tender with a bit of massaging.
