What's your favorite bean recipes? I have my quarterly subscription box of Rancho Gordo beans coming but still have a few pounds from last box. I'm in a bean rut!

One-Pot Beans, Greens and Grains Recipe: Endlessly riff-able! I like to chop and sauté an onion in the pot (plus any other veg I need to use up) before adding the grains and liquid. Also adding a spoon of Better Than Bouillon or using broth instead of water adds a ton of flavor. A splash of vinegar and hot sauce at the end is also excellent.

Lemony Salmon and Spiced Chickpeas: Theoretically the salmon is the star of this recipe, but really I could skip it entirely (and have when hosting vegetarian guests) in favor of the chickpeas with garlic and za’atar.

Herbs de Provence work in a pinch as a substitute if your grocery store doesn’t offer a za’atar mix, though it’s easy to create a house blend.

Vegan Caesar Salad With Crisp Chickpeas: this one is really tasty! the miso paste and nori together add a great tangy flavor so you don't miss the anchovies, and if you make this with a good helping of garlic it's a real crowdpleaser
