Toogoodtogo as a recipe driver is one of my favorite things. I recently got an enormous produce hall which was way more fruit heavy than I usually go, including nine (!) bananas…
I used four in the Ottolenghi sesame date and banana cake and three in a banoffee pudding which was not structurally sound (the dulce de leche didn’t harden and instead of a graham cracker crust I used stale saltines and cookie crumbles which became rock hard and difficult to cut. However fellow partygoers reported that it was a delicious sauce for the other cake! And at least one attendee was egg-free and so had a dessert option to partake of)
If I had to do it all again I would probably just buy a can of dulce de leche but I have done the cooking condensed milk thing before and it worked just this time got color and no thickness. Also the Ottolenghi cake is very good and I’ve made it a few times but I think going full cream cheese with the frosting is fine and the mascarpone doesn’t add much/it’s fine to add honey instead of brown sugar. Anyway happy Labor Day etc
