Samin Nosrat's Buttermilk-Marinated Roast Chicken

Damn @samin this was such a hit!! I messed up a little and my bird was too big (whoopsie) but it just meant a longer cooking time and it still had us all delighted. I served it with what I had in my pantry (rice and canned green beans) since the fridge was not well-stocked, and it felt like Thanksgiving dinner!!
