We're getting to the time of year where there are TONS of ripe tomatoes that aren't $10 a lb - you'll start seeing them for saucing and other storage options at better prices straight from the farm etc.
I developed this recipe two years ago when I grew piles of tomatoes (photo below) and it is truly my favorite jam - so balanced - so fun on toast on it's own or divine in any burger you make from mushroom up to the wilder side of animal proteins.
It's not paywalled right now - take it and enjoy. I will make this until my last day. You do need yuzu juice to find its most full expression - I use YUZU Co juice to make it because I now buy it in bulk and carry it with me when I travel.
