A great answer to hummus fatigue. I make this mezze more than any other because I'm always trying to find new ways to add beans to my world. The confit tomatoes are important here both the fruit (yes a fruit) and the oil. I grew Row 7 Sweet Princes as a part of my attempt to learn how to garden a couple of years ago and they no joke are my favorite tomato - if you make me pick just one - small - sturdy - productive and SO MUCH FLAVOR - perfect for confit - I made piles and froze some - still using them a year later.
