My brilliant chef friend Deborah Gorman makes a cordial from rosa rugosa, the common fragrant wild rose which rambles across the coasts of our Maine islands, and this is her recipe: 1 cup water 1 cup sugar 2 cups beach rose petals. Heat water and sugar until sugar dissolves; add petals. Take off heat. Steep for up to 12 hours in the fridge. Strain. Make cocktails with lime juice and watch the color turn from purple to pink!
