Aka flavor diamonds. Usually found in cheeses aged over two years. The longer the cheese ages, the more crystals you get and the sharper the flavor. Aged cheddars, Goudas, and real Parmigiano Reggiano will have a lot of them.

“My partner brings this home from the store and calls it my “cheese with crystals” or sometimes “I got you your crystal meth!””
