Birthday Carrot Cake

My go-to carrot cake recipe by Loopy Whisk always gets rave reviews. The icing is an inspired middle ground between whipped cream and cream cheese. I made this for my birthday party on saturday and forgot to take pictures of it before it was soundly devoured.
