I have a few different types of carbon steel pans. This is the best of the bunch.
In terms of pans more generally, you basically only need a few pots and pans:
Medium and Large carbon steel for high heat cooking and/or versatile sautéing.
A Large dutch oven for braises
A Small non stick skillet for scrmabled eggs or omelets. Buy it cheap and rotate annually.
A Spaghetti / stock pot.
2-3 stainless steel medium sized sauce pans.
None of these need to be fancy and buy them at homegoods when they are on sale.
The rest of this recommendation is only available to paid members.

“This pan takes work to season but once it’s seasoned right it is the Cadillac of meat cooking pans. No acids ever go in this pan, fat and protein only. I get the crispiest fish skin in the world w this mf”
