We buy this and Romano, run them through a food processor into a freezer bag, and freeze. Then we decant the mix into our Parmesan shaker. Works great!

We typically leave ours whole and grate as needed. We leave the wedge in the fridge wrapped in beeswax wrap or in a ziploc.

Blend hunks of it up in a food processor and store it in the freezer. I do a 50/50 of blend of parm and pecorino. Or save the hunks of cheese in the fridge. Wrap in parchment paper and then tinfoil.”
