Crispy Mushrooms With Creamy White Beans and Kale
Recommended by Laurie Cambra Seplow
Turns out, cannellini beans and maitake mushrooms are a marriage made in heaven! Two adjustments to make this the best vegan version: skip the feta cheese, season the bean purée with Espelette pepper to taste, and it wouldn't hurt to finish with a drizzle of EVOO.
