Sarah, this is a late comment, but I had set this aside a while ago to make for my kid's birthday, because he's a coconut obsessive. I now have all the ingredients and plan on making it this week. Just wanted to check in if you have any last-minute tips for me? I'm a moderately experienced home baker, but don't make cakes like this a lot!
Hi! I followed her instructions to a T and the cake turned out great. My only swap was that I didn't have finely shredded coconut - I had regular shredded so I ran it through the food processor first to make it fine. Also (as always) don't skip the parchment paper liner :)
