The quickest way for me to lose respect for someone is proud ignorance of Deep South. I stopped watching Subway Takes when Kareem Rhama confidently dismissed our culture and said you can get gumbo in Queens.

Every gumbo is different and reflects family traditions, regional styles, and the style and soul of the chef. The best gumbo comes from unexpected places - food stalls, church sales, roadside stands. This is where you’ll be able to shake the hands that made the roux.
