vidalia onion soup with wild rice - smitten kitchen

I've made it with and without the blue cheese toasts and, even as a blue cheese lover, kind of prefer letting the simplicity of this soup shine without the stinky cheese. as deb says, this is a lighter, easier, springier (but welcome anytime) sister to french onion soup. in deb we trust.
