If you cut the squash crosswise as opposed to lengthwise, you'll get longer, more spaghetti-like strands.
It's counterintuitive, but because of the way the flesh strands align in a spaghetti squash, if you cut it lengthwise, you split all of those strands in half.
Also, try cooking at a lower temperature and a shorter cooking time — 350ºF for 45 minutes. The strands are firmer and hold their shape when twirled.
