Most sourdough recipes you see online or even in print focus on the Tartine style of sourdough baking which is roughly a 24 hour process from stop to finish with an overnight fridge rest. I personally absolutely love the more traditional (sin refrigeration) process of making sourdough which uses a higher percentage of starter or preferment (inoculation). So if want to mix a loaf of sourdough bread in the morning and eat some later that day save and try my same day sourdough. I use to run a small but popular cottage bakery in Austin, Texas.
