I’m so glad you asked… >start with cold water and kombu and bring to a simmer for 15-20 mins (1 sheet kombu per 2 cups water) >remove kombu, add in 2-5 dried shiitakes (depending on how much umami you want) and bring to a softer boil for about 10 more mins >remove shiitakes, add in dashi packets (i usually do 1 packet per 2-3 cups water) >portion your serving out. i usually do about a tablespoon of miso (i have been into white mellow miso lately) for a small bowl of miso. whisk that up >cut up some small blocks of soft tofu and toss em in >add a shake of dried wakame >slice some scallions and toss them in >now you have miso soup *add your miso into each bowl, not all the broth at once unless you’re serving all the broth at once.
