IMO the perfect iced coffee beverage, originally from Algeria. Puckery fresh-squeezed lemon juice sweetened with brown sugar, layered with sparkling water and two shots of espresso (pour over the back of a spoon to retain layers) over ice. Gorgeously bright, refreshing afternoon perk-up in a frosty highball glass.
