Humboldt Fog

One of my mom's favorite cheeses! Contrary to popular belief, this isn't a blue cheese; it's a soft-ripened goat cheese with a lot going on. It's tangy. You keep wondering if it went bad because it has so many... interesting textures, especially around the rind. You wonder if you bought blue cheese by mistake. There's a layer of vegetable ash?? I told you, a lot is going on here, but trust me, it's all good. Just part of the experience and a tasty cheese.
