I love soft, buttery, bloomy cheeses like Brie and Camembert, but they don't have to necessarily have a bloomy rind. They should be gooey, though. What are some artisanal cheese should I try?

Jasper Hill Farm in Vermont is making incredible cheese. I recommend ordering one of their gift boxes for a real treat for yourself/family and proceed to sample delicious cheeses for a few weeks.Their Harbison - a bloomy rind, spoonable cheese wrapped in spruce bark is noteworthy.

Second this wholeheartedly. It kind of tastes like a cheeseburger with special sauce, in a good way? Meaty and cheesy and an umami bomb.
