Gluten free Trader Joe’s chocolate chip cookie dough

I love warm cookies out of the oven and nothing is easier than tollhouse break and bake cookies which I missed desperately after my diagnosis. These are the best sub I’ve found. So many of the other brands taste healthy. These taste like buttery sugary cookies and are even better when you leave them a little underbaked in the middle. Add sea salt.

High fibre! High protein! Hearty! Warming! Packed with loads of hidden healthy bits to trick toddlers (or yourself) into eating more veggies! Could easily be adapted to be vegetarian or vegan or dairy free or whatever you like. My recipe below (members only) <3

Folded eggs with veggies

Sauté sliced mushrooms & kale in an oiled pan on medium-high heat Add a tiny bit of butter for extra (optional) flavour & season to your liking Whisk 2 eggs through a sieve into a lightly oiled pan on medium-high heat Shake the pan to loosen the eggs a little, then when they begin to cook (this will happen quickly), begin gently folding with a spatula Remove the pan from the heat just before the eggs are cooked to your preferred liking (they will continue cooking once removed from the heat) Top with crispy chilli oil & spring onion

Pesto rigatoni (gluten free!)

Blend basil, kale, toasted pine nuts, garlic, parmesan & a generous pour of extra virgin olive oil in a food processor Optional pesto add ins: add a little tang with some lemon juice or spice it up with some pickled jalapenos Cook pasta in heavily salted water until al dente (I used Rummo gluten free rigatoni) Reserve a little pasta water & mix into the sauce with a tbsp butter (optional) until it's a creamy consistency Serve with a generous sprinkling of parmesan & some extra toasted pine nuts

Gut friendly banana bread

Ingredients 2 ripe bananas 2 eggs 2 cups gluten-free oats (blended in a food processor) Pinch of salt 1 tsp baking soda 1/4 cup maple syrup 1 tsp vanilla extract 2 tbsp flaxseed A bunch of cinnamon Method Preheat oven to 350°F / 180°C Blend oats in food processor until semi-smooth Add all other ingredients into food processor and blend Mini loafs - coat mini loaf pan in olive oil, divide batter into 8 sections, bake 20 minutes Traditional loaf pan - pour batter into a parchment-lined 8x5 loaf pan and bake for about 40 minutes Let cool for 10-15 minutes before enjoying! ~ from Dr Stolberg's instagram Potential add-ons or substitutes dates, cacao, choc chips, cacao nibs, honey, buckwheat flakes/flour, etc. YUMMY!

Had these in NYC and almost spit it out the first bite- it was so freaking good and bagely I thought it had gluten for sure. I have them shipped to me in CA now. Splurge, but worth every penny since I can’t just go get a baked good anymore (also not a lifestyle choice for me).
