Smashed beef kebab with cucumber yogurt
This one is quick, cozy, and really tasty. Made this a lot with a new baby at home and we would double it, throw in some zucchini to up the veggie content if we felt like we needed it, and would doctor up a whole tub of yogurt to keep in the fridge. A fast dinner MVP and we looked forward to leftovers every time!

“Perennial weeknight dinner favorite. I’ve made this with beef or lamb. I always cut the pita into quarters and toast them. I sub pistachios and craisins for the walnuts and raisins just because it’s my taste. One of my daughter’s favorites.”
