Sheet-Pan Salmon with Jammy Tomatoes and Peppers and Polenta

Made this new recipe from Caro Chambers tonight. Everyone ate it, including my almost 20 month old. (Although to be fair, she eats everything—except, weirdly, eggs—and often eats more than her parents and older sister combined.)
