Speaking as someone who (also?) has a hyperspecific but vast cookbook collection, this site might aid in your search for new and interesting titles. You can search by region, author, color of cover, publisher, photographer, etc. I like the focus on the people involved in the making of the books, and I've found many a new favorite here.

Yeah... I have a specific taste that is hard to find recommendations for and I'm almost always a little (secretly) disappointed when someone gifts me one. Although, there have been some hits over the years!
OH! I didn't mention it first, but on the off chance you don't already know - Eat Your Books (original web version)/ Cookshelf (newer, shinier app version of EYB but slightly less searchable) is *brilliant* for scouting through potential want-list cookbooks. You can see all the various recipes (title and ingredients, but not instructions) and compare it to the books you already have. I recall seeing a wishlist function within it too.
And Booklarder (https://booklarder.com/) is a phenomenal cookbook store in Seattle, with a proper online presence and a very good preorder/ new arrivals section. They ship!
Thank you for the EYB tip, I don't know about it! But yes to book larder! It's amazing in there. The first time I went in person I felt like I blacked out for like two hours looking at every book
Okay now sorry for the third comment, but if you aren't on Netgalley yet, I'm already seeing some cookbooks I was able to get early access for!
I am so intrigued by the netgalley suggestion. Do you find it easy to follow up and review the books you get copies of, or does the obligation seem to pile up alongside the to-read stack? Is it mostly PDFs or do you get hard copies too?
The first time I was browsing the site I requested access to books like crazy and then more than I anticipated accepted my request so then it did kind of pile up and I got a little overwhelmed by the reviews but once I got my rhythm of reviewing its now easy and I really enjoy it. PDFs only, so its not super feasible on mobile but easy on a laptop or kindle!
