“Authentic Italian Parmigiano-Reggiano Consortium certified cheese for about $12 a pound- half the price you can find at other grocery stores. Blend hunks of it up in a food processor and store it in the freezer. I do a 50/50 of blend of parm and pecorino. Or save the hunks of cheese in the fridge. Wrap in parchment paper and then tinfoil.”
