In the late 1950s, Avon Neal and Ann Parker were bopping around the cemeteries of New England, making rubbings from early gravestones (these occasionally pop up on 1st Dibs and eBay; they are extremely cool). They noticed the array of scarecrows and other figures people made and started taking pictures of them. Those pictures are collected in this 1969 book. I finally got a copy after wanting it for years, and it is a stone-cold delight, a catalog of folksy horror and creepiness.
It also includes the most sinister snowman I have ever seen.
