I love the concept and also, I know that professional kitchens use a lot of similar for storage. Real question though - the bag or other container the food comes in has useful info - expiration date, lot #, ingredient details, etc. Is it worth decanting and losing that info?

Good question! We use our label maker, Larry, to note important expiration or opened on dates. We will also sometimes clip info we want to keep and tape on the lid. The gain of a pantry that is easy to use and visually structured is worth the loss of packaging imo.
