Roasted Eggplant with Cashew Butter

Potluck help! I need a vegetarian main that I can schlep on the train to work, keep in the fridge, and then schlep again to a weeknight potluck. Bonus points if it’s good at room temp and goes well with bread and butter (what someone else is bringing).

Our neighbors brought this over for a dinner party yesterday and it was delish! Only caveat to your requirements is the individual components should be packaged separately, and ideally the eggplant is gently heated before serving.
