A mash-up of a couple of different recipes I peeked at based on the ingredients I had & my current dietary needs.
I used wild-caught hoki for this, but I think any white fish would work.
I added garlic, finely sliced whole fennel bulb, spices, a tin of tomatoes (didn't have any tomato paste, which would be nice to add to this), a bunch of ground spices I had on hand (cumin, coriander, cinnamon, paprika, ginger), a squirt of honey and a splash of red wine.
I think it would be yummy to serve with a lemon couscous, but I am doing gluten-free atm, so served with some black rice, a little lemon and butter for flavour.
Topped with Greek yoghurt and fennel fronds. Forgot to add toasted flaked almonds & lemon zest because I was hungry but that would be a nice addition!
