Good bean cookbook that has Indian recipes- I have the Rancho Gordo bean book which is great but definitely centered off the Indian continent.

660 Curries by Raghavan Iyer: This cookbook has changed my life and the lives of everyone I know who also own it. It’s the best curry cookbook and has a MASSIVE legume section. I’ve learned about so many different types of legumes from it. The recipes are easy to follow and range from extremely simple to a long project. It’s saved me when I’m in a pinch and need to cook a delicious meal with pantry ingredients. I cannot recommend this cookbook enough.
