Smitten Kitchen’s cornmeal griddle cakes

I especially like that these are “griddle cakes,” instead of boring old pancakes.

I like to make them with Bob’s Red Mill coarse grind cornmeal. My MOST IMPORTANT rec, though, is to brown your butter.
