Caramel Apple Cider Cookies

Great for fall, but also for holiday cookie parties!

I love the big caramel in the middle, but they also make smaller caramel pieces that you can toss into the dough like chocolate chips, too! They're especially good if you warm them up in the toaster oven or microwave before eating, and are amazing with a little vanilla ice cream.
