Having a summer dinner party this week, and the weather is getting in the way of my grill-focused fantasies. Looking for easy but impressive meals for a crowd, highlighting summer produce. Must be vegetarian.

This thing SLAPS. I make it every summer and am making it for my book club this week too! It’s a a total delight and a crowd-pleaser. Don’t be put off the mayonnaise (you can trust me in this, as I hate mayonnaise).
