“Violet Witchel was the first person I followed on Substack several years ago, solely for her Dense Bean Salad recipes. She has several variations, but this La Scala one is still my absolute favorite. It’s such an easy way to get some extra fiber in, and these salads truly get better as they sit, so leftovers are a treat. I make a big batch on Mondays and it lasts 3–4 days in the fridge.”
